Carriageworks Winter Night Markets

Curated by Biota's James Viles, this years Winter Night Markets is celebrating all things WILD. Honouring locally sourced ingredients that are seasonal and ethically sourced, producers and restauranteurs have been asked to use the entire ingredient. Encouraging customers be involved in the process; to respect the produce they're eating as well as thinking about where it comes from and how we eat it.

In honour of the theme, we're making a rum baba cake soaked in BRIX distillers rum syrup, served with caramelised and poached apples, Messina jersey buttermilk gelato and vanilla chantilly cream.

The buttermilk gelato is made fresh with Messina Jersey Milk from our farm in Numurkah, Victoria. The fallen apples have been grown on the Messina farms as well, before they were caramelised and poached in our kitchens.

There'll also be a suite of top bars and vendors like; A1 Canteen, Boon Cafe, Fish Butchery, LP's Quality Meats, Starward Whisky and Archie Rose Distilling Co. And there'll be live music and cooking demos from some of Sydney's best producers.
