Black Forest Cake

Our Black Forest cake has a bottom half of chocolate fondant gelato, kirsch semi freddo with amarena cherries, and a chocolate crackle disc. The top half contains a cherry sorbet hemisphere encased in a crisp dark chocolate dome. All finished with a dark chocolate spray.

Bombe Alaska

This is our take on the classic dome shaped dessert. This cake contains the perfect pairing of raspberry sorbet and dark chocolate gelato, on a bed of flourless chocolate sponge, finished with Italian meringue.

Dr. Evil's Magic Mushroom

The top dome of this cake is filled with Dr Evil gelato (dark chocolate gelato, peanut cookies and dulce de leche) and is topped with layers of vanilla cream, chocolate sponge, a red ganache, and white chocolate buttons to finish.

Hazelnut Zuccotto

Adopted from a traditional Sicilian recipe, this was Messina’s first gelato cake and has since evolved to become our signature cake. Our ‘Classic’ version is filled with both hazelnut and gianduia gelato. It is encased in a frangelico soaked hazelnut sponge & hazelnut cream, then finished in a gianduia mirror glaze

Juliette

Contains a wild strawberry sorbet centre with vanilla chantilly and strawberry gelato, all on a base of marsala and strawberry syrup soaked sponge. Finished with piped meringue and raspberries.

The Block

The Block contains layers of both peanut butter and salted caramel gelato, atop a white chocolate, peanut butter and peanut praline base. All finished with a white chocolate velvet spray and a peanut chocolate florentine.

Tiramisu Smash

A traditional northern Italian favourite, Tiramisu gelato combines fresh eggs, mascarpone and marsala. In our interpretation, a white chocolate/coffee ‘bowl’ is filled with layers of Tiramisu gelato and lady finger biscuits. This is finished with Italian coffee meringue dusted with cocoa. Finally, top and centre is a ball made from white chocolate, rolled in coffee bean & dark chocolate which is filled with a coffee and marsala gel.

Triple Choc

For lovers of chocolate.. Milk chocolate gelato covers strips of both white chocolate and dark chocolate fondant gelato. Finished with a white chocolate velvet spray and a milk chocolate block on top. Sits on a thin layer of flourless chocolate sponge.

Tronchetto

Consists of dulce de leche, chocolate chip gelato, vanilla chantilly, and flourless chocolate sponge, finished with a white chocolate ganache (orange coloured finish).
