The Classic 8 Course Degustation Is Back In Sydney

The Creative Department is back at its Darlinghurst residence serving a classic degustation menu after a busy month in Melbourne and Japan.

Early in February, Head Chef Remi Talbot partnered up with Tokyo born chef Zaiyu Hasegawa at Den in Japan, debuting his new Creative Department dishes for Den's regular Tokyo customers.

Using traditional Japanese ingredients with his French and Italian pastry influences, he developed dishes like roasted yuzu sorbet with burnt vanilla and shio koji cream as well as a more savoury spiced muscovado gelato, milk chocolate mousse with a shiitake crisp and Japanese truffle.

The Creative Department then went on tour in Melbourne at our secret restaurant out the back of our Windsor store. Remi showcased local ingredients for Produce Week and a more savoury protein based menu for the Starward Whiskycollaboration.

In our classic Sydney sittings, you'll experience Remi's local produce inspired menu paired with complimenting non alcoholic liquid concoctions.
