Pasteuriser

At Messina HQ, our trusty pasteuriser is where every one of our flavours comes to life. Whether you're at our Marrickville, NSW store or all the way over in Highgate, WA, every single scoop has been crafted meticulously, right here in this very machine.

Paila

This is the magical machine where all our dulce de leche is made! The Paila was imported straight from Argentina, it’s probably the only one of its kind in Australia… pretty cool, right?

Here’s a fun fact: back in 2016, all imported milk products from Argentina were banned by the Australian government! Yep, and that meant we couldn’t make the rich, creamy Dulce de Leche gelato our customers had come to know and love. So, what did we do? We jumped on a plane to Argentina, spent some interesting hours with a sweet-talking local named Santiago (our Spanish was... a work in progress), and learned how to make authentic Dulce de Leche.

Bakery

Did you know we make every single addition that goes into our gelato right here at Gelato Messina? Yep, that includes all the brownies, cookies, fudge, praline and more are made from scratch on-site! Shadow Baking also does most of their baking here too.

You can even ask in-store to sample flavours like Tiramisu, Italian Nougat, Pistachio Praline, and Cookies & Cream—all packed with our handmade additions!

Cakes

Behind every one of our incredible gelato cakes and limited-edition creations is a team of super-skilled pastry chefs working their magic by hand. From delicately hand-painting chocolate eggs to artfully drizzling glaze over the iconic Dr Evil Mushroom cake, every masterpiece is crafted with love, and a whole lot of talent.

If you’re keen to treat yourself (or someone special) to one of our gelato cakes, pop into the Marrickville store! Just head to the left when you walk in, and you’ll find our full range of gelato cakes on display–ready to purchase or pre-order for your next celebration.

Chocolate Room

Step into our world of chocolate wonder! Up the back, you’ll spot our pride and joy—our very own chocolate refiner. Yep, we make every bit of chocolate from scratch. Just in front of you, our talented chocolatiers are hard at work, handcrafting mouth-watering bars, decadent blocks, and stunning garnishes.

Feeling those chocolate cravings kicking in? We don’t blame you! Head over to our store, where you’ll find the full range of our irresistible chocolates. Choose from singles to treat yourself or indulge in packs of 2, 4, or 8 to share (or not—we won’t judge!).

Test Kitchen

In here, our creative team spends hours conceptualising, making, and testing all of the unique and interesting treats that you eat from Messina. From specials in-store to event products, it always begins in this room.

Shadow Baking

Shadow Baking is our sister company and pastry partner, founded by three of Messina’s head chefs, the masterminds behind all the incredible creations from our kitchens.

Driven by the need for more space to showcase their delectable treats, Tom Mitchell, Florian Fritsch, and Remi Talbot brought Shadow Baking to life.

They had a stint in the Marrickville HQ carpark but now are permanent residents inside Messina Marrickville on weekends.


They're open inside the Messina store Thursday - Sunday from 8am until sold out.
