Wine Notes Via Good Pair Days — Creative Department Collaboration

Welcome to our first official wine partnership at our Darlinghurst restaurant. Accompanying the 8-course degustation will be drops paired by Banjo Harris Plane — three-time Australian sommelier of the year, and co-founder of Good Pair Days.

From 7–9th November, you'll be able to book tickets to either a 6pm or 8:30pm, 2-hour sitting with an 8-course degustation by Head Chef Remi Talbot and the Messina Team and 8-matched glasses of wine, paired by Banjo from Good Pair Days.

Each fermented wine has been carefully selected to complement the dish, with bottles from Australia, France and Italy — finishing with two complex dessert wines.

Dario Rota '27' Lambrusco NV

Emilia-Romagna, Italy

The Dario Rota 27 is a classic example of a savoury Lambrusco that balances its exuberant red
fruit character with cleansing acidity and a light earthiness. Plenty of cranberry and plum, juicy
fresh and just a little too easy to drink

Crawford River 'Beta' Sauvignon Blanc/Semillon 2015

Henty, VIC

Naturally fermented, this blend spends 11 months in oak, and the textural complexity from the
oak is plain to see. Flavours of lime, pear and nougat give way to a lovely racy finish that
balances the richness of the middle palate.

ArFion Chardonnay 2017

Yarra Valley, VIC

A modern classic, built around texture, acidity and flavour. Modern and complex Aussie
Chardonnay from a Yarra Valley young gun, Dave Mackintosh . Notes of almond, perfectly ripe
nectarine and grapefruit. There's a smoky edge to the fruit, but that just makes it more complex.
A moreish but savoury style, with a creamy texture and snappy acidity.

Ngeringa 'JE' Pinot Noir 2017

Adelaide Hills, SA

Elegant Pinot Noir from one of the finest biodynamically run vineyards in the Adelaide Hills, this
Mt Barker Pinot Noir is an absolute cracker. There's a sweet, ripe fruit nose. Lots of sweet
cherries, ripe plum and rose petals. Dry, but alive and juicy - full of fruit and joy. The Adelaide
Hills as a region is really producing some cracking wines of late, and the Pinots are amongst
some of the best.

Domaine de Roquefort 'Corail' Rosé 2016

Provence, France

A great rosé is one that combines succulence and freshness with a high level of complexity.
This is one such a wine - based on Grenache for the strawberry and redcurrant core of fruit, it
has a lifted floral character and a chalky, dry finish. A silken texture and plenty of acidity round
out the package.

Vincent Caillé 'X Bulles' NV

Loire Valley, France

Zing - this is an electric sparkling wine, sure to wake up your tastebuds. Made from local
western Loire grape variety Melon de Bourgogne, this sparkling wine is made biodynamically. It
is superbly light and fresh, with no dosage (added sugar), and has bright aromas of lime zest
and daisies, whilst the palate is succulent, citrusy and saline.

Campbells Rutherglen Muscat NV

Rutherglen, VIC

This is hands-down one of Australia's greatest contributions to the world of fine wine, yet wildly
under-appreciated. The warm climate of Rutherglen ripens luscious Muscat grapes to full
maturity, and the amber nectar is then fortified before it has fully finished fermenting, leaving the
wine rich and sweet. This classic example from Campbells is loaded with hedonistic flavours like
fig, treacle, raisin, dark chocolate, honeycomb and caramel. The palate is silken, sweet and
gently spicy, with such a long finish.

Chateau Pavillon 2013

St-Croix-du-Mont, France

A luxurious blend of botrytis-affected Sauvignon Blanc and Semillon from the region of
St-Croix-du-Mont, just outside the famous Sauternes. Rich flavours of apricot, honey and
cooked peach intertwine with ginger and candied lime.
