Redfern gelato shop sundae

Wunderlich Exchange

Visit us at 📍 Gelato Messina Redfern – Wunderlich Lane

From 27th February to 1st March, we’re part of Wunderlich Exchange at Wunderlich Lane in Redfern. A limited-time series where the precinct’s incredible stores collaborate and swap ideas.

Inspired by their Mexican flavours, we're partnering with Lottie to create two custom menu items at both venues exclusively for the exchange. Our contribution? A limited-edition sundae built around one of our cult favourite sorbets Salty Margs.

LIME AFTER LIME SUNDAE

An elevation on the classic Salty Marg sorbet, layered in-cup and built to hit every note of sweet, sharp and creamy all in one spoonful.

From the bottom up: toasted coconut crumble with coconut vanilla mousse, lime tequila marmalade, a generous scoop of Salty Margs sorbet and finished with lime zest and dehydrated lime

The crumble brings texture, the mousse softens everything out, the marmalade adds that citrus-tequila edge, and the sorbet cuts through with lime, orange zest and sea salt. Aka it tastes really really good.

And Over At Lottie

As part of the same exchange, Lottie is using our Salty Margs sorbet in their restaurant for their own take. An ‘ahogado’ style dessert cocktail.
